Founder Ed Schild quickly realised that the soft dark berry fruit, fine tannins and vibrant acid of Southern Valley Barossa Shiraz are ideally suited to make a 'red fizz'. Fragrant nose of blackberry, mulberry and dark cherry, with delicate hints of chocolate, spice and roasted coffee beans. The palate is dominated by a round creamy texture, dark fruit, rich chocolate and fine tannins. Refreshing acidity balances the sweetness. Clean and savoury finish. Drink to 2024.
Food pairing: For aficionados of sweet sparkling red. Try it with dark chocolate mousse, poultry accompanied by sweet & sour cranberry sauce. Slightly decadent with BBQ ribs!
