Characteristics:
Balanced Viognier, with great structure: lively citrus, gentle white flower aromatics and creamy texture through gentle barrel fermentation and 8 months spent sur lie. Grapes grow in the Damiano Vineyard high up in the Sierra Foothills region of the Sierra Nevada. 4% Marsanne is added to the Viognier.
Foodpairing:
Great structure to pair with chicken, pork or rabbit with creamy sauces. Serve with shellfish with a hint of spice or dishes with ginger; saffron and coconut. Vegetarians can share it with carrots, parsnips, sweet potaties and spicy butternut squash.
About the winery:
Winemaker Carol Shelton has sought out exceptional vineyards throughout California including Dry Creek Valley, Russian River Valley and Mendocino. She develops close partnerships with each grower to ensure her wines maintain and express the unique terroir of the vineyard. Her Wild Thing label denotes that the wine is produced using the wild yeasts found on organically grown grapes.
