Characteristics:
Dry white wine, intensely aromatic and complex Sauvignon Blanc. Aromas and flavours of citrus, grapefruit, hints of apple and guava. Fresh lively acidity contributes to a crisp and balanced finish. The Sauvignon vineyards are situated high up in the mountains, receiving direct South-Western cold Atlantic winds which helps the grapes retain their fruit flavours. The wine also spent 5 months on the fine lees, which adds to the complexity of this cuvée. Fair Trade certified wine.
Food Pairing:
Perfect as an aperitif, with white fish, with salads featuring goat cheese, with asparagus or avocado. With soft white cheeses like feta or mozzarella. Pair with (mild) Thai dishes with lime, coriander, and coconut. Delightfully fresh with chicken with lemon and rosemary or with pasta pesto. Also great with veggie dishes including green beans and zucchini.
About this winery:

The estate is Fair Trade certified, was recognized as a WWF Conservation Champion in 2021, and is fully carbon negative.
