Cold climate Pinot Noir with aromas and flavours of dried florals, fresh red fruits of strawberry and cranberry and an inviting savoury earthiness. Delicate, fresh palate with pomegranate and strawberry. Matured for 9 months on French 300 litre oak, 20% new.
Elegant pinot, serve with roast chicken or pigeon. Rack of lamb, served pink. Rare fillet steak and carpaccio. Go for roast pork with herbs and fennel or chicken sausages or sweetbreads. Dishes with morels and other wild mushrooms or mushroom risotto. Roast or grillled lobster.
